After replacing the rear tyre and brake shoes on the V7 special, the wheel now starts to bind as I tighten the spindle nut, it's fine when the nut is loose. The brake shoes are backed right off on the adjuster and the shoes will rotate freely in the drum off the bike. I see that there are shims between the distance pieces between the wheel bearings. Could this be the cause (it was fine beforehand) and if so, how do you check for the correct shimming please?

Discovered the cause, I think. One wheel bearing is goosed, the other OK. So a new bearing and new seals with a re-shim should restore normal service.
