I must confess to having removed everything possible from my old Suzuki DR 650, since I only use it on the mountain, where there are no regulations, I don't aspire to sandwiches, (especially diagonal) and I don't mind what it looks like, since like me it was never pretty. Its value is in its utility, which is absolutely stonking, so anything non-functional, decorative or non-essential is anathema.
It is also capable of being surprisingly loud, on a straight-through pipe and simple trumpet intake, though it can be ridden at sub-Harley decibels. 

Had I done the same to my old V50 Monza I would hang my head in shame.

So horses for courses, someone can be rightfully proud of their work, and if those are really indicator bulbs in the ends of the frame tubes under the seat - then I raise my glass. 

But the elephant in the room, for me, will always be the ghost of the original machine.

And as my old Russian grandma used to say, "A long scarf has no pockets."

And my own position on this- Well, each to their own but I do prefer side panels. With removable panels and mounts of course just in case I change my mind, after all we are all getting older
