My head bearings were pretty tight, and I had some handling issues.  Things are better now that they've been loosened off, but still don't feel ideal.

So I'm planning on replacing over the coming weeks, but want to plan to minimise time off the road.

Apart from 2 sets of bearings, are there any other parts that I will/may need to replace whilst apart?

Any other tips on easing the process would be very welcome.

I would buy the spacer piece that sits under the lower bearing (part # 14516700) and the rubber cup which sits between the spacer and the bearing (part # 14517000).
 
You might be lucky getting the lower bearing off and not damage these parts but it can be tricky.
 
The bearing cups can be popped out quite easily using a drift up/down the steering head but some care is needed getting the replacements in. Get them SQUARE and tap them in lightly with a large drift against the outer edge - better still is to use the correct tool but it is rare/expensive. Make sure those cups are all the way home otherwise the bearing will become loose as they finally bed in.
 
And the lower bearing will fit best if you use a tube over the steering stem against the inner race - again get it all the way home. The top bearing is an easier fit (usually) and it is OKish to use the threaded locknut to push it down as you tighten it. There should (must) be a washer between the upper chrome bearing cup and the lock nut. Get it all nicely fitted and checked before removing the lock nut again to finally fit the top yoke.
 
Also - lots of grease.
 
One last thought: you may have to file the steering lock hole in the steering stem (it gets chafed by the lock pin) to get the lower bearing off/on. Worst case is the stem is actually bent which means new parts. It can be bent by the bike falling over while the lock was on.

All as a Gianni post top man, might help to put bearings in freezer before fitting gives a little less interference. I had to take dremel to bottom bearing outer, very tight and unable to fit puller

Sure about that??  I'd think that would make the inner race tighter than ever to the steering stem.  I used refrigerant shot up my steering stem to cool it before installing the bearings to help out on my Lemans.
