Very interesting thank you. Issue seems to be when the engine warms up. So this might be the problem. Too tight clearances!! Shame on me but I'm getting a real actual motorcycle mechanic to look at it tomorrow.

Reading through this again.
Stalling , wet plugs etc. You're getting the valve clearance checked which wont hurt. Don't forget to look at the choke plunges, they have little rubber buttons on their ends and these will cause flooding and stalling Worth a look, they're only 6 quid each if needed , mine were worn and did exactly what you're experiencing.

These are new carbs with new choke plungers, so I think it's something else. Hopefully valves, maybe valve seals. Fingers crossed. I've got decent compression so there is hope.

All new jets? Are you sure they are all correct? Needles also correct and in the right notch? Are you getting coloured smoke from the exhaust? If not then it's unlikely that the valve guide seals have gone. In my experience the needle jets can wear badly in service, mine were positively oval. So if these are still the original, change them.

with 25ooo miles on it, I'd be surprised at rings etc -
valve stem seals would give a puff of oil at start up then clear and usually not enough to foul plugs. has this only just started?? after laid up for a while ?? or has it been rough for a while gradually deteriorating?? I'm thinking(apart from other things) stale petrol for one and bad plug leads/caps etc if you have brand new carbs and all the jets and float needles and float height are right then look towards sparks maybe?? slow process

I’m not familiar with small blocks but if the choke is controlled via cable and handlebar lever make sure the choke is fully returned and not sticking on. I expect that the choke is on top of the carb in which case ignore this post😀
