Does anyone know how to remove the steering lock barrel, in order to replace it? |

Unless you've got the key, its a drill out job or maybe a lock smith can pick it.
The lock cover needs to be removed. Then the lock turned anti clockwise about 1/4 turn and the whole lock should then spring out. Refer to this link if you need to drill but be mindful of swarf getting near your steering bearings.

I must admit I hate steering locks as they do nothing to stop thieves (a heavy twist on the bars usually breaks them, as I've found to my cost). So given the opportunity (as you have) I'd probably take it out and chuck it away.

My insurance states that the steering lock HAS to be engaged when I'm not at the bike.
I had trouble getting it to actually lock when the tank was in place, but tank of, it locks fine, however I cannot see any obstruction with the tank on?!!!

Strange insurance stipulation. Mine doesn't say anything about locks at all. I do rely on a sold secure disc lock. I know that they can be removed in minutes with an angle grinder but I always leave it where there are lots of passers by. At the end of the day if someone really wants your bike (probably unlikely with my V50) they will have it as I've found to my costs several times over the years.

When I was originally getting a quote I happened to mention that I use an additional locking means, as I usually do add a disc lock or cable or whatever (and which is not make specific or Thatcham approved), and it ended up as a requirement printed on the certificate! |

The advice must be "don't volunteer anything"! A bit like health conditions on travel insurance.If they don't ask, don't tell.

When I tried to insure my workshop against burglars, the agent visited and told me I would have to first put bars on my doors and windows.
I replied that if I did that, I wouldn't need his insurance, and he was off down the road at 4mph, talking to himself. So I didn't insure, I ensured. Bike insurance here has been quick and painless, over the phone, in English, with a very small annual increase. No questions about where the bike is kept, or recent misdemeanours. What ...?
